Deconstructing Modernist Cuisine

The International Culinary Center in New York will be hosting a panel with industry veterans tonight to discuss the future of modernist cuisine. Although many speculate that deconstructing dishes (see video below of José Andrés' version of Corn on the Cob) and experimenting with liquid nitrogen in the kitchen is just a short-lived trend, others disagree.
